Chocolate Bites

These days it’s got to be quick quick quick!
Looking after bub full-time gives me the perfect excuse to indulge, but I refuse to resort to junk!
Here is my latest little chocolate fix, ready in minutes.

Ingredients

  • 1 cup raw almonds

  • 7 Medjool dates

  • 3 tbsp raw cacao powder

  • 6 tbsp melted coconut paste*

  • Pinch sea salt

* Coconut paste is made from whole coconut flesh that is ground into a creamy paste. Loving Earth do a beautiful one in a glass jar. Place jar in a pot of boiling water and allow to melt enough to easily stir through with a spoon.

Method

  • Place almonds and dates in food processor and process until almonds are a rough meal. You may have to scrape the edges every now and then to ensure the almonds and dates are well combined.

  • Add the remaining ingredients and process to combine.

  • Transfer the mix into a silicon loaf mould and press down with your fingers. A silicon mould works really well, but you could also use a baking dish. I like to go over it with the bottom of a measuring cup and a spatula to smooth it out.

  • Refrigerate for 3 hrs or so until firm.

  • Remove the whole slab onto a chopping board and chop it up into bites.

  • If you used a baking dish, simply slice in the dish.

  • Store bites in an air-tight glass jar in the fridge for up to 2 weeks ( I hear you laugh). You could also freeze them.
